TRUFFLE HUNTING
Truffle hunting in Umbria is a deep-rooted and fascinating tradition, closely linked to local culture and gastronomy. Umbria, known for its green landscapes and lush hills, is one of the most renowned places in Italy for truffle hunting, especially the prized black truffle and the white truffle.
Territory and Environment
Umbria, with its pristine forests, offers an ideal habitat for the growth of truffles. The forests of oaks, holm oaks, hazelnuts and hornbeams, present throughout the region, create the ideal conditions for the development of these underground delicacies. The most famous areas for truffle hunting are the surroundings of Norcia, Spoleto, Città di Castello, Gubbio and Valnerina.
Umbrian Truffles
Black Truffle (Tuber Melanosporum): This truffle is the most sought after and is mainly harvested during the winter months, from December to March. It has an intense aroma and a delicate but persistent flavor, and is the protagonist of many Umbrian recipes.
White Truffle (Tuber Magnatum Pico): Although less abundant than the black truffle, the Umbrian white truffle is harvested in the autumn months, from October to December. It has a stronger and more pungent aroma, and is considered one of the most prized and expensive truffles.
Summer Truffle (Tuber Aestivum): This type of truffle, also called scorzone, is harvested between May and August. It has a less intense flavor than the prized black truffle, but is highly appreciated in summer preparations.
In recent years, truffle hunting has become a tourist attraction. Many Umbrian agritourisms and farms offer guided experiences for visitors, allowing them to participate in the search for truffles and discover the secrets of this ancient tradition. These tours often end with tastings of truffle-based dishes, such as the famous tagliatelle with black truffle, crostini with butter and truffle, or eggs with truffle.
